How to Make Surti Sev Khamani | Instant Sev Khamani.

Surti sev khamani is a very popular snacks recipe from surat (Gujarat) and exclusively available in entire gujarati cities. This snack food dish tastes little sweet, sour and tangy which make everyone mouthwatering. Mainly it is prepared from coarsely grinded split Bengal gram flour, unique chutney and some other spices. It is really very simple and easy to make plus requires very less time to cook is well. With being delicious it is also healthy and good for kids too.

This quick surti sev khamani is also well known as amiri khamani or instant khamani in gujarat. Overall taste of this dish depends on the chutney and tempering if both are good then definitely you’ll get amazing taste. You can prepare this khamani for morning breakfast or evening time. Along with this you may also like ragda patties, surti plaza, gujarati Handvo, arvi na patra etc…….

Ingredients for Surti Sev Khamani:

Ingredients for Khamani:

1 Cup Coarsely Grinded Split Bengal Gram Flour or Chana Dal Flour.
1 tbsp Ginger Chilli Paste.
2 tbsp Sugar.
Salt according to taste.
¼ tsp Citric Acid or Nimbu ke Ful.

Ingredients for Tadka:

1 tsp Mustard Seeds.
1 tsp Cumin Seeds.
1 tsp Sesame Seeds.
1 tbsp Sugar.
1/8 tsp Citric Acid or Nimbu ke Ful.
Pinch of Salt.
3 tbsp Oil.

Ingredients for Garnishing:

1 tbsp Dry Raisins.
1 tbsp Tutti Frutti.
1 tbsp Thinly Sliced Fresh Coconut.
Nylon Sev as per required.
Some Coriander Leaves.

Ingredients for Chutney:

4-5 Pieces of Chana Dal Khaman.
3 tbsp Coriander Leaves.
3 tbsp Fresh Coconut.
Lemon Juice of 1 Lemon.
Salt according to taste.
2 tbsp Sugar.
Water as per required.
1 tbsp Ginger Chilli Paste.
3-4 Garlic Cloves.

Surti Sev Khamani Preparations:

  • For making chutney take a mixer jar and put in pieces of chana dal khaman, coriander leaves, fresh coconut, lemon juice, salt, sugar, ginger chilli paste, garlic cloves and water.
  • Now grind all the spices well then take out chutney in a bowl and keep aside.
  • Now take coarsely grinded chana dal flour in a bowl then add in salt, sugar, citric acid or nimbu ke ful, little water and keep the mixture aside for 30 minutes.
  • Consistency of batter should be like of dhokla, after 30 minutes add in ginger chilli paste and put the batter in a greased plate in steamer and cook it for 12-15 minutes.
  • After 12-15 minutes take out the khamani mixture and let it cool for few minutes.
  • When mixture cools down take out 4-5 pieces for chutney and sieve the rest of mixture because we require coarse mixture for khamani.
  • Now heat oil in a kadai and add in cumin seeds, mustard seeds, sesame seeds and let them crackle.
  • When they start crackling add in 4 tbsp water, salt, citric acid or nimbu ke ful and sugar.
  • When tadka starts bubbling add in sieved khamani mixture in it and mix well.
  • Now cook it for 2 minutes, after 2 minutes take out in a serving plate.
  • Now first put chutney then nylon sev, tutti frutti, dry raisins, slices coconut and finally garnish with some coriander leaves and enjoy the delicious surti sev khamani.
