Hello friends today here we are with a very healthy and delicious Indian curry recipe which belongs to gujarati cuisine (Kathiyawad). It is well known as simple mix veg curry or kathiyawadi mix vegetable curry. Mainly it is prepared from potatoes, tomatoes, onions, cabbage, capsicum, corn kernels, curd or yogurt and some other spices. This is really very simple and easy to make gujarati curry plus requires very less time to cook is well.

All the required ingredients to make this quick simple mix veg curry are very simple and commonly available in grocery shops and markets. In gujarat you will find this curry in most of the restaurants and dhabas exclusively. It goes really good with baje ka rotla (Millet Flour Bread) but you can also have this with roti or paratha. Along with this you may also like some other gujarati curries like gujarati gathiya curry, onion chilli gathiya curry, lima beans curry, sev tomato gravy etc……..

Ingredients for Simple Mix Veg Curry:

Main Ingredients:

2 tbsp Chopped and Fried Potatoes.
2 tbsp Chopped and Fried Brinjals or Eggplants.
2 tbsp Chopped and Fried Red, Green and Yellow Capsicum.
2 tbsp Finely Chopped Cabbage.
2 tbsp Onions Cut in Square Shape.
1 Medium Size Finely Chopped Tomato.
3 tbsp Onion Paste.
2 tbsp Cooked American Corn Kernels.
2 tbsp Curd or Yogurt.

Other Spices/Ingredients:

1 tbsp Garlic Chutney.
½ tsp Turmeric Powder.
1 tsp Coriander Powder.
1 tsp Cumin Seeds.
½ tsp Garam Masala.
1 tbsp Coriander Leaves.
Salt as per taste.
3 tbsp Oil.

Garnishing:

Fried Dry Red Chillies.
Some Coriander Leaves.

Simple Mix Veg Curry Preparations:

  • Heat oil in a non stick kadai then put dry red chillies and fry for few seconds and take out in a plate.
  • Now in same oil put cumin seeds and wait till starts slathering.
  • Now add in onion paste and cook it till it starts leaving oil at edges.
  • Now add in garlic chutney and saute for little time then add in tomatoes and cook till become soft.
  • Now add in turmeric powder, salt, coriander powder and saute spices for little time.
  • Now add in curd or yogurt and cook it for little time then add in some water, fried brinjals, potatoes, cabbage, all three capsicum, square cut onions and American corn kernels.
  • Now cover and cook curry till it starts leaving oil at edges.
  • When veggies get cooked and oil comes on top add in garam masala and aging cover and cook for 1 minute.
  • After 1 minute turn the heat off and take out the delicious simple mix veg curry in a serving bowl.
  • Garnish with some coriander leaves and fried dry red chillies and serve hot.
