This easy Methamba recipe is made from raw mango, jaggery, fenugreek seeds and some other Indian spices, and all the required ingredients for this yum pickle are very simple and commonly available which is a good thing. You can have this with roti, paratha or any rice dishes and it goes good as a accompaniment with regular lunch or dinner dishes. Ingredients for Methamba Recipe:

Main Ingredients:
½ Cup Chopped Raw Mango.
¼ Cup Chopped Jaggery.

Spices / other Ingredients:
1 tsp Chilli Powder.
¼ Cup Water.
Salt to Taste.
2 tsp Oil.
¼ tsp Mustard Seeds.
¼ tsp Asafoetida Powder.
½ tsp Fenugreek Seeds Coarsely Ground.

How to Make Methamba Recipe:

  • Heat oil in a pan.
  • When it gets heated add mustard seeds and let it splutter.
  • Now add asafoetida powder then ground fenugreek seeds and wait till they releases aroma.
  • Add mango pieces and stir it well.
  • Add red chilli powder again stir well.
  • Add water, cover pan and let mango pieces cook in steam.
  • Now add jaggery and salt and stir well.
  • Let it simmer for about 8 minutes.
  • Now turn the heat off and take off the pan from heat.
  • Let it cool uncovered then take it out in a serving bowl.

Ingredients

Notes

It keeps fresh outside the fridge for about three days. If stored well-covered in the refrigerator, it should stay fresh for at least a week.
