Mango Fried Rice Recipe | Healthy Indian Rice Recipe.

Rice recipes and dishes are very popular in India, specially in south India people love to have rice dishes throughout the day, so I tried to make something different with rice and I made this mango fried rice. This is really very simple and easy to make Indian rice recipe. best thing about this quick mango fried rice is that you can also use the leftover rice of last night. Taste of this yum pulao is little spicy and tangy but you can make as you like.

All the required ingredients to make this Kacche aam ke chaval are very simple and commonly available in kitchens. You can make this for breakfast or lunch or dinner and enjoy with your family. Ingredients for Mango Fried Rice:

Main Ingredients:

1 Cup Rice (Leftover one day).
2 Raw Mango (make paste of it by adding 2 tsp water in it and bend it).

Other Spices/Ingredients:

3 tsp Peanuts.
1 tsp Sugar.
10-12 Curry Leaves.
¼ tsp Turmeric Powder.
1 Dry Red Chilli Chopped.
¼ tsp Red Chilli Powder.
¼ tsp Bengal Gram Lentil.
¼ tsp Black Gram Lentil.
¼ tsp Rai Dana or Mustard Seeds.
1 tsp Desi Ghee or Clarified Butter.
Pinch of Asafoetida.
1 tbsp Oil.
Salt to Taste.

Mango Fried Rice Preparations:

  • First of all heat oil in pan then add peanuts and fry for little time at medium low heat, take them out in plate.
  • Now in the same oil add Bengal gram lentil and cook for little time then add black gram lentil and cook it little.
  • Now add mustard seeds and dry red chilli and stir well.
  • Now add Asafoetida, curry leaves and turmeric powder and mix all the ingredients well.
  • Now add raw mango paste and cook it little.
  • Now add red chilli powder and salt to taste, stir well, cover and cook it little then add and mix ghee.
  • Now add rice and mix all the ingredients very well.
  • Now melt sugar in water and add it to the rice and cook it for further few minutes.
  • Finally add some peanuts and mix well and serve the yum mango fried rice.
