How to Make Malai Kofta at Home | Punjabi Kofta Curry Recipe.

Hello friends today here we are with another popular and delicious north Indian curry recipe which belongs to punjabi cuisine. It is well known as malai kofta and exclusively available in most of the north Indian restaurants and dhabas. But today here we’ll show you how to make restaurant style malai kofta at home with the same taste as you get in any restaurants and dhabas. Taste of this yummy creamy and fabulous curry is really very tempting and irresistible.

This curry is prepared in two main steps and they are first is kofta and second gravy, after preparing both separately they are served together which makes everyone’s taste bud change. You can make this easy malai kofta curry for any special occasions, parties or get together and make everyone happy. Along with this you may also like some other popular north Indian curries like paneer butter masala, paneer tikka masala, shahi paneer, kadai paneer, paneer capsicum tomato etc…….

Ingredients for Malai Kofta:

Ingredients for Kofta:

350 gm Home Made Paneer or Cottage Cheese.
7-8 Chopped Cashew Nuts.
7-8 Chopped Almonds.
15 Raisins.
¼ tsp Black Pepper Powder.
1 tsp Cardamom Powder.
3 tbsp Corn Starch.
Salt as per taste.
Oil for frying.

Ingredients for Gravy:

1 Cup Boiled Cashew Nuts Paste.
1 Cup Cream.
1 Cup Milk with added 2 bread slices and grinded to fine paste.
2 ½ tsp Sugar.
5 Green Cardamoms.
2 Bay Leaves.
1 tsp Ginger Paste.
Salt as per taste.
2 tbsp Oil.

Malai Kofta Preparations:

  • For making koftas first dry roast the almonds, cashews and raisins for just 1-2 minutes in a pan then take out in a bowl.
  • Now take paneer in a big plate then add in about 1 or 1 ½ tbsp corn starch and mash both well with hands.
  • Now add in about 1/8 tsp pepper powder, little bit salt and pinch of cardamom powder and again mash it well.
  • Now make small size of koftas from mashed paneer then take one paneer ball and with help of fingers make thick flat puri.
  • Now put some dry roasted almonds, cashews and raisins then cover it and make kofta ready, make all the koftas ready similarly.
  • Now heat oil in kadai, roll the koftas on corn starch then remove the excess corn starch so there will be a very thin layer of corn starch on koftas.
  • When oil gets hot put koftas in oil and fry till become light golden brown.
  • Stir the koftas continuously so they don’t get burnt and cook nicely.
  • While frying oil should be medium hot, now take out the koftas in a plate and keep aside.
  • Now for making gravy heat oil in pan, when oil gets little hot add in bay leaves, green cardamoms and roast both for few seconds.
  • Now add in ginger paste, cashews paste and cook it for few minutes at medium heat.
  • When cashews paste get cooked and releases oil add in cream and mix well.
  • Now add in milk and bread paste and again mix well.
  • Now add in about 1 tsp cardamom powder and little bit of water.
  • Now add in sugar and mix well and cook for few minutes.
  • When gravy seems to start boiling turn the heat off and add and mix little bit salt and take out the gravy in a serving bowl.
  • Now put the koftas in gravy and garnish it with some almonds, cashews, raisins and cardamom powder and serve hot.
