Cucumber Barfi Recipe in Steamer.

Cucumber barfi recipe in a steamer, after hearing this name you might know it’s a steamed sweet recipe, there is no need of baking or freezing just steam for few minutes in a steamer and enjoy the yum sweet. As you all know cucumber is a very healthy and nutritious vegetable and good for healthy is well. That’s the reason I thought of this Indian sweet dish to prepare, this is really very simple and easy to make barfi recipe and you can make it in just around an hour.

I am sure you have had lots of different kinds of cakes and sweets but this easy cucumber cake is very unique and different from others, in taste as well as in making too. You can have this as a side dish with your regular meals or any time during the day. With this you can also check out other sweet dishes like coconut barfi, papaya barfi, guava cheese barfi etc.

Ingredients for Cucumber Barfi Recipe in Steamer:

Main Ingredients:

2 Cups Grated Cucumber.
1 ½ Cup Semolina.
1 ½ Cup Jaggery.
¾ Cup Grated Fresh Coconut.

Other Spices/Ingredients:

4 Green Cardamoms.
¼ tsp Cumin Powder.
3 tbsp Chopped Cashews (Optional).
½ tsp Butter for greasing the pan.

Cucumber Barfi Recipe in Steamer Preparations:

  • Roast the semolina till it will get pink colour and fragrant, keep aside.
  • Take green cardamom in mortar-pestle and powder them.
  • Slice the cucumber and remove the seeds, if you are using regular cucumber then no need to remove the seeds.
  • Now grate the cucumber and keep aside.
  • Don’t through the cucumber juice collected in bowl or plate while slicing use it in batter.
  • Now take a big bowl put roasted semolina in it then add cucumber along with its juice, coconut, cashews, powdered jaggery, cardamom powder and cumin powder.
  • Mix the batter very well without any lumps, the batter has a medium consistency and is neither too thick nor thin.
  • You can add a few tbsp of milk or coconut milk if the batter is thick in consistency.
  • Heat about 3 ½ cups water in idli steamer, grease the pan with coconut oil.
  • Pour the batter in the pan, place the pan in the steamer, cover the steamer with its lead.
  • Steam for 30-40 minutes until a knife inserted comes out clean.
  • When the cucumber cake become warm or is cooked completely, then slice and serve.
